  • 12 tostada shells
  • 1 lb raw peeled shrimp
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 2 tsp olive oil
  • 2 ripe avocados (for guacamole)
  • 34 tomatoes (for pico de gallo)
  • 1 tsp minced garlic
  • 1 jalapeo pepper (minced)
  • medium red onion (minced)
  • 1/2 small bunch cilantro (minced)
  • juice from 1 lime
  • 1/2 tsp salt
  • 1/4 tsp pepper

Instructions

  1. Prepare the marinade by mixing chili powder, cumin, oregano, garlic powder, onion powder, salt, black pepper, and olive oil in a bowl. Toss the shrimp until well coated.
  2. For guacamole, mash avocados and mix in minced cilantro, garlic, lime juice, salt, and pepper until smooth yet chunky.
  3. Make pico de gallo by combining diced tomatoes, minced garlic, jalapeo pepper, minced red onion, and cilantro in a separate bowl.
  4. Preheat a grill pan over medium heat and cook marinated shrimp for about 1-2 minutes per side until opaque.
  5. Assemble tostadas by layering each shell with guacamole followed by grilled shrimp and pico de gallo.
