  • 4 portions (8 ounces each) fresh Mahi Mahi
  • ½ fresh pineapple, peeled and sliced for grilling
  • ¼ cup extra-virgin olive oil
  • 1 medium red bell pepper, diced
  • ½ medium red onion, diced
  • ½ bunch cilantro, chopped
  • Juice of 2 tablespoons lemon
  • 1 serrano pepper, chopped
  • Salt and pepper to taste

Instructions

  1. Marinate the Mahi Mahi in olive oil, lemon juice, minced garlic, cumin, salt, and pepper for at least 15 minutes.
  2. Preheat grill to medium-high heat. Grill pineapple slices for 3-5 minutes per side until caramelized.
  3. Remove the fish from marinade and grill for 4-5 minutes on each side until cooked through and flaky.
  4. In a bowl, mix grilled pineapple with bell pepper, onion, cilantro, serrano pepper, salt, and pepper to create the salsa.
  5. Serve grilled fish topped with pineapple salsa.
