  • 1 lemon, thinly sliced
  • 1 medium red onion, cut into chunks (optional)
  • 1 cup cherry tomatoes
  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 1 tbsp fresh thyme (or 1 tsp dried thyme)
  • 2 cloves garlic, minced
  • Salt and black pepper to taste

Instructions

  1. Prepare the marinade by whisking together olive oil, lemon juice, thyme, minced garlic, salt, and pepper in a bowl.
  2. Pat the halloumi cubes dry and toss them in the marinade. Let marinate for 1015 minutes.
  3. Assemble skewers by threading halloumi cubes, lemon slices, onion chunks (if using), and cherry tomatoes onto soaked wooden or metal skewers.
  4. Preheat your grill or grill pan to medium-high heat and oil the grates.
  5. Grill skewers for about 23 minutes per side until the halloumi is golden and lightly charred.
