  • 1.5 lb salmon fillet (skin on)
  • Zest and juice from 1 large orange
  • 1/2 tbsp olive oil
  • 1 tbsp brown sugar
  • 1 tsp chipotle chili powder
  • 1/2 tsp cumin
  • Kosher salt
  • Freshly ground black pepper
  • Thin slices of another large orange

Instructions

  1. Soak a cedar plank in beer and water for at least 4 hours.
  2. In a bowl, whisk together orange zest, juice, olive oil, brown sugar, chipotle powder, and cumin.
  3. Place the soaked plank on a grill; arrange salmon skin-side down on the plank.
  4. Rub the marinade evenly over the salmon; season with salt and pepper and top with orange slices.
  5. Preheat grill to medium-high heat (about 415F) and cook salmon for 25 to 30 minutes until it flakes easily.
