  • cup mayonnaise
  • 1 clove garlic
  • 3 tablespoons chives
  • 3 tablespoons tarragon
  • Juice and zest of lemon
  • 4 slices whole-wheat bread
  • 1 cup arugula
  • 6 ounces mozzarella cheese
  • 1 medium avocado
  • Alfalfa sprouts

Instructions

  1. In a bowl, whisk together Greek yogurt, mayonnaise, garlic, chives, tarragon, lemon juice and zest, salt, and pepper until smooth.
  2. Spread the sauce evenly on both sides of each slice of whole-wheat bread.
  3. Layer half of the arugula on two slices, followed by mozzarella, cucumber slices, avocado slices, and alfalfa sprouts.
  4. Top with remaining bread slices (sauce side down) and press gently to close.
  5. Cut sandwiches in half diagonally and serve immediately.
