  • 2 – 3 lbs frozen cubed hash brown potatoes
  • 2 cups whole milk (or half-and-half)
  • 1 lb deli White American cheese (cubed)
  • 4 oz chive and onion cream cheese (softened)
  • 1 can (4 oz) fire-roasted green chiles
  • 2 tsp garlic salt
  • 1 tsp onion powder
  • 1 cup shredded Monterey Jack cheese
  • 1 Tbsp butter (cubed)

Instructions

  1. Preheat the oven to 350F and spray a baking dish with cooking spray.
  2. In a heavy-bottomed saucepan, melt the whole milk and White American cheese over medium heat until smooth. Stir in the cream cheese until fully combined.
  3. Add the fire-roasted green chiles, garlic salt, and onion powder to the mixture; stir well.
  4. In a large bowl, combine the thawed hash browns with the queso sauce until well coated.
  5. Pour into the prepared baking dish, top with Monterey Jack cheese, and dot with butter.
  6. Bake for 45-50 minutes until golden brown and fork-tender. Let rest for 5-10 minutes before serving.
