  • 6 tablespoons extra virgin olive oil
  • 1/2 onion (minced)
  • 3 garlic cloves (chopped)
  • 1 carrot (thinly sliced)
  • 1 stick of celery (finely chopped)
  • Zest and juice of 1 lemon
  • Kosher salt and freshly ground pepper
  • Optional: 500 ml vegetable stock

Instructions

  1. Drain and rinse soaked beans before adding them to a large pot.
  2. Heat olive oil over medium heat; saut minced onion until translucent, then add garlic until fragrant.
  3. Stir in sliced carrot and chopped celery; cook for about 5 minutes until softened.
  4. Add beans and enough water or optional vegetable stock to cover by an inch; season with salt and pepper.
  5. Bring to a gentle boil, then reduce heat and simmer uncovered for about 90 minutes until beans are tender.
  6. Stir in lemon zest and juice; serve hot, garnished with extra olive oil if desired.
