  • 12 oz pasta (penne or fusilli)
  • 2 tbsp extra virgin olive oil
  • 2 cloves garlic (minced)
  • ½ small red onion (finely chopped)
  • 1 ½ cups cherry tomatoes (halved)
  • ½ cup Kalamata olives (sliced)
  • 1 tbsp lemon juice
  • ½ cup feta cheese (crumbled)
  • Fresh basil (for garnish)

Instructions

  1. Cook the pasta in a large pot of salted boiling water until al dente. Reserve ½ cup of pasta water before draining.
  2. In a skillet, heat olive oil over medium heat. Sauté garlic and onion until softened.
  3. Add cherry tomatoes and olives to the skillet, cooking until tomatoes are soft.
  4. Combine cooked pasta with lemon juice, seasonings, and add reserved pasta water as needed for consistency.
  5. Fold in crumbled feta cheese and serve warm, garnished with fresh basil.
