  • 4 large Yukon Gold potatoes
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon oregano
  • 1/2 teaspoon dried dill
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 cup fresh parsley (finely chopped)
  • 1 medium red onion (finely chopped)
  • 1/4 cup feta cheese (crumbled)

Instructions

  1. Preheat your oven to 425F (220C).
  2. Wash and cut the Yukon Gold potatoes into uniform sticks about 1/3 inch wide.
  3. Soak the cut fries in cold water for 10 to 15 minutes; drain and pat dry.
  4. In a large bowl, toss the fries with olive oil, salt, oregano, dill, black pepper, and garlic powder until well-coated.
  5. Line a baking sheet with parchment paper and spread fries in a single layer.
  6. Bake for 15 minutes; flip fries over and bake for another 6 to 8 minutes until golden brown.
  7. Remove from oven and top with parsley, red onion, and feta cheese before serving warm.
