  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground oregano
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup fresh dill, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup finely diced red onion
  • 4 cloves garlic, finely minced
  • 1/2 teaspoon lemon zest
  • 1 tablespoon olive oil, for frying
  • Chopped romaine
  • Feta, for serving
  • Cucumber
  • Tomato
  • White rice
  • Tzatziki sauce

Instructions

  1. In a mixing bowl, combine ground chicken, salt, black pepper, cumin, oregano, red pepper flakes, dill, mint, red onion, garlic, and lemon zest. Mix until just combined.
  2. Scoop the mixture into meatballs using a cookie dough scoop or tablespoon and shape them with your hands.
  3. Heat olive oil in a large skillet over medium heat. Add meatballs and cook for 34 minutes on each side until browned and cooked through (165F internal temperature).
  4. Serve over chopped romaine lettuce with feta cheese, cucumber slices, diced tomatoes, white rice, and tzatziki sauce.
