  • 1 pound ripe figs, chopped
  • 2 tablespoons maple syrup
  • 2 tablespoons lemon juice and zest
  • 1 teaspoon vanilla extract
  • 1 cups gluten-free rolled oats
  • ? cup almond flour
  • ? cup tapioca flour
  • cup coconut sugar
  • teaspoon baking soda
  • teaspoon salt
  • ? cup coconut oil, melted

Instructions

  1. Preheat oven to 350F and line an 8-inch square baking pan with parchment paper.
  2. In a pot, combine chopped figs and maple syrup over medium heat; cook until thickened (1520 minutes). Stir in lemon zest, juice, and vanilla; let cool.
  3. In a mixing bowl, whisk together oats, almond flour, tapioca flour, coconut sugar, baking soda, and salt.
  4. Add melted coconut oil and maple syrup to the dry mixture; stir until combined.
  5. Press half of the oat mixture into the prepared pan. Spread fig filling on top and crumble remaining oat mixture over it.
  6. Bake for about 20 minutes until lightly browned. Cool completely before slicing.
