  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 6 cups gluten-free chicken broth
  • 4 boneless, skinless chicken breasts
  • 1 cup frozen peas
  • 1 cups gluten-free all-purpose flour
  • 2 teaspoons baking powder
  • teaspoon salt
  • teaspoon black pepper
  • cup milk (or dairy-free alternative)
  • cup unsalted butter, melted
  • 1 large egg

Instructions

  1. In a large pot, heat olive oil over medium heat. Saut onion, carrots, and celery for 5-7 minutes until softened.
  2. Add garlic, thyme, rosemary, salt, and pepper; cook for another minute.
  3. Pour in chicken broth and bring to a boil. Add chicken breasts, reduce to a simmer, cover and cook for about 20 minutes.
  4. While cooking, prepare dumpling dough by mixing flour, baking powder, salt, and pepper in one bowl and combining milk, melted butter, and egg in another.
  5. Mix wet ingredients into dry until just combined.
  6. Shred cooked chicken with forks and return to the pot along with frozen peas.
  7. Drop spoonfuls of dumpling dough onto the simmering broth's surface. Cover and cook for an additional 15 minutes without lifting the lid.
  8. Serve hot in bowls.
