  • cup unsulphured or dark molasses
  • cup unsalted butter
  • 2? cup all-purpose flour
  • 2 tsp ground ginger
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • tsp ground cloves
  • tsp ground nutmeg
  • cup brown sugar
  • cup sour cream or plain yogurt
  • cup whole milk
  • 1 large egg
  • Lemon juice and powdered sugar for glaze

Instructions

  1. Preheat oven to 425F and coat a muffin tray with cooking spray.
  2. In a glass bowl, melt molasses and butter together in the microwave; let cool slightly.
  3. In another bowl, whisk together flour, spices, baking soda, and salt.
  4. Mix brown sugar, sour cream, milk, and egg into the cooled molasses mixture.
  5. Gradually combine wet ingredients with dry ingredients; stir until just mixed.
  6. Fill muffin tray to the top with batter; sprinkle coarse sugar on top if desired.
  7. Bake at 425F for 5 minutes; reduce temperature to 350F and bake for an additional 1114 minutes until a toothpick comes out clean.
  8. Let cool on a wire rack before glazing with lemon icing.
