  • 2 3/4 cups all-purpose flour
  • 1 1/2 teaspoons ground ginger
  • 1 teaspoon cinnamon
  • 3/4 cup unsalted butter
  • 1 cup brown sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1/3 cup molasses
  • 3/4 cup marshmallow cream

Instructions

  1. Preheat the oven to 350F (175C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, ginger, cinnamon, baking soda, and salt.
  3. In another bowl, cream butter and brown sugar until fluffy. Add egg, vanilla, and molasses; mix until combined.
  4. Gradually add dry ingredients to the wet mixture until dough forms.
  5. Scoop tablespoon-sized balls onto the prepared sheets; bake for about 10 minutes until edges are set but centers remain soft. Cool slightly before transferring to wire racks.
  6. Beat softened butter and marshmallow cream together, adding salt and powdered sugar until smooth. Spread filling on half of the cookies and sandwich with the remaining cookies.
