  • 1 to 2 lbs boneless, skinless chicken breasts or thighs
  • cup olive oil
  • 2 tbsp lemon juice
  • 4 garlic cloves, minced
  • cup grated Parmesan cheese
  • Italian seasoning
  • smoked paprika
  • salt
  • black pepper
  • Fresh parsley for garnish

Instructions

  1. In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, Italian seasoning, smoked paprika, salt, black pepper, and grated Parmesan.
  2. Add chicken to the marinade and coat well. Cover and refrigerate for at least 30 minutes or up to 4 hours.
  3. Preheat the grill to medium-high heat and lightly oil the grates.
  4. Grill chicken for 57 minutes per side until it reaches an internal temperature of 165F (75C). In the last few minutes of grilling, sprinkle additional Parmesan on top.
  5. Remove from grill and let rest for 5 minutes before serving. Garnish with fresh parsley.
