  • 4 boneless skinless salmon fillets
  • 1/4 cup plain flour
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tbsp olive oil
  • 6 tbsp unsalted butter (divided)
  • 2 cloves garlic (finely diced)
  • 1/2 cup vegetable stock
  • Fresh parsley and lemon wedges for garnish

Instructions

  1. In a shallow dish, mix flour, garlic powder, salt, and black pepper. Coat each salmon fillet in the mixture.
  2. Heat olive oil in a non-stick pan over medium-high heat. Fry the coated salmon for about 3 minutes on one side until golden brown. Flip and cook for another 2 minutes.
  3. Add 1 tablespoon of butter to the pan and baste the fillets until almost cooked through. Remove from the pan.
  4. For the sauce, sauté diced garlic in the same pan, then add vegetable stock while scraping up bits from the bottom. Whisk in remaining butter until emulsified.
  5. Return the salmon to the pan to warm through in the sauce before serving.
