  • 3 tablespoons sugar
  • ? cup melted butter
  • 1 (3.4 ounce) box instant lemon pudding mix
  • 2 cups milk
  • 6 tablespoons lemon juice
  • 8 ounces Cool Whip Whipped Topping
  • 12 ounces fresh raspberries
  • 2 tablespoons sugar

Instructions

  1. Preheat the oven to 350F.
  2. Mix graham cracker crumbs, sugar, and melted butter; press into a greased 9-inch pie pan. Bake for 9-10 minutes and cool completely.
  3. In a bowl, whisk together pudding mix and milk until thickened; stir in lemon juice and fold in Cool Whip.
  4. Blend raspberries with sugar until smooth.
  5. Layer half the lemon filling in the cooled crust, add half the raspberry puree, then top with remaining lemon filling and swirl in more raspberry puree.
  6. Cover with foil and freeze for about three hours until firm.
