  • 1½ cups finely crushed Bob’s Red Mill Lemon Blueberry Granola
  • 6 tablespoons unsalted butter, melted
  • 2 cups blueberries (plus more for topping)
  • 14-ounce can sweetened condensed milk
  • ½ cup freshly squeezed lemon juice
  • 8-ounce container frozen nondairy whipped topping, thawed
  • ½ teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Prepare the crust by mixing granola and melted butter in a medium bowl. Press into a 9-inch pie plate and chill in the freezer.
  2. In a food processor, puree blueberries until smooth. In a large bowl, whisk together blueberry puree, sweetened condensed milk, lemon juice, whipped topping, vanilla, and salt until combined.
  3. Pour filling into the chilled crust and top with additional blueberries.
