  • 1 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 3 cups gluten-free corn flakes (crushed)
  • 1/2 gallon vanilla ice cream (softened)

  1. Soften the vanilla ice cream by leaving it at room temperature for 10-15 minutes.
  2. In a medium saucepan, melt the butter over medium-low heat. Stir in brown sugar and cinnamon; simmer for about 2 minutes.
  3. Remove from heat and mix in crushed corn flakes until well coated.
  4. Press half of the corn flake mixture into a 9×13 baking dish and cool in the freezer for approximately 10 minutes.
  5. In a bowl, mix softened ice cream with additional cinnamon and vanilla bean paste (if using) until smooth. Pour over cooled crust.
  6. Top with remaining corn flake mixture, press lightly, cover with plastic wrap, and freeze for at least 5 hours or overnight.
