  • 8 large fresh peaches (peeled, pitted, and sliced)
  • 2/3 cup organic brown sugar
  • 2/3 cup organic sugar
  • 1 tsp lemon juice
  • 2 tsp corn starch
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 stick Earth Balance butter (cut into small pieces)
  • 1/3 cup boiling water

Instructions

  1. Preheat your oven to 425F.
  2. In a large mixing bowl, combine sliced peaches with brown sugar, organic sugar, cinnamon, corn starch, lemon juice, and nutmeg. Stir until well coated.
  3. Pour the peach mixture into an ungreased 9 x 13 baking dish and bake for 10 minutes.
  4. In another bowl, whisk together flour, sugars, baking powder, and salt. Use a pastry blender to mix in butter until crumbly.
  5. Add boiling water to the dry mixture and stir until combined.
  6. Spoon the topping over the baked peaches evenly.
  7. Mix additional sugar and cinnamon in a small bowl and sprinkle on top of the cobbler.
  8. Bake for approximately 35 minutes or until golden brown.
  9. Serve warm with ice cream.
