  • 4 large sweet onions, thinly sliced
  • 1 pound short cut pasta, cooked
  • 3 tablespoons unsalted butter
  • cup all-purpose flour
  • 2 cups milk
  • 12 ounces Gruyre cheese, freshly grated
  • 4 ounces Parmesan cheese, freshly grated
  • ? cup seasoned bread crumbs

Instructions

  1. Caramelize the onions: Heat olive oil in a large oven-safe skillet over medium heat. Add onions with a pinch of salt; cook until softened (10-15 minutes). Reduce heat to low and stir frequently for 60-90 minutes until golden brown.
  2. Preheat oven to 375F. Boil pasta according to package instructions until al dente.
  3. Make the cheese sauce: In the same skillet, melt butter, add flour while whisking to create a roux for about 2-3 minutes. Gradually whisk in milk until thickened; add nutmeg.
  4. Stir in most of the Gruyre until melted and mix with three-quarters of the caramelized onions. Combine with cooked pasta.
  5. Top with remaining cheese and onions; sprinkle with breadcrumbs. Bake for 25-30 minutes until golden and bubbly.
  6. Let cool slightly before serving.
