  • 1/4 cup warm water
  • 1 tsp sugar
  • 1 cup milk
  • 1/4 cup shortening
  • 1/4 cup sugar
  • 1 tsp salt
  • 1/2 cup mashed potatoes
  • 1 egg
  • 45 cups flour
  • For brushing: 2 Tbsp butter

  2. Heat milk and shortening in a microwave-safe bowl until mostly melted.
  3. In a stand mixer, mix the milk mixture with sugar, salt, mashed potatoes, egg, yeast mixture, and 2 cups of flour until combined.
  4. Gradually add remaining flour until dough forms a soft ball.
  5. Knead for 5-10 minutes until smooth.
  6. Let rise in a greased bowl for 45-60 minutes or until doubled in size.
  7. Shape into rolls and place in a greased pan; let rise again for 30-45 minutes.
  8. Bake at 375F for 10-14 minutes or until golden brown.
  9. Brush with melted butter immediately after baking.
