  • 3 large eggs (separated)
  • ½ cup full-fat cottage cheese (drained and blended smooth)
  • 1 tablespoon cornstarch
  • ¼ teaspoon cream of tartar
  • ½ cup fresh blueberries
  • Optional: powdered sweetener, vanilla extract, lemon zest

Instructions

  1. Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Drain excess liquid from cottage cheese and blend until smooth.
  3. Beat egg whites with cream of tartar until stiff peaks form.
  4. In another bowl, whisk egg yolks, blended cottage cheese, sweetener (if using), vanilla extract (if using), lemon zest (if using), and cornstarch until combined.
  5. Gently fold the yolk mixture into the whipped egg whites.
  6. Fold in fresh blueberries carefully.
  7. Scoop batter onto the prepared baking sheet with space in between.
  8. Bake for 25-30 minutes until golden brown.
  9. Allow to cool before serving.
