  • 3 tablespoons tahini
  • Juice of lemon

Instructions

  1. Preheat your oven to 425F (220C) and line a baking sheet with parchment paper.
  2. Wash and chop mixed vegetables into uniform pieces. Place on the baking sheet and drizzle with olive oil, salt, and pepper.
  3. Roast in the preheated oven for 25-30 minutes until tender and caramelized, tossing halfway through.
  4. Cook quinoa or brown rice as per package instructions (about 15-20 minutes).
  5. In a small bowl, whisk together tahini with lemon juice and water until smooth; adjust consistency as needed.
