  • 1 cup digestive or graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 tablespoons sugar
  • 400g cream cheese, softened
  • 1/2 cup pistachio paste or finely ground pistachios
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/2 cup sour cream
  • 1 cup fresh or frozen blackberries
  • 2 tablespoons sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon cornstarch dissolved in 1 tablespoon water
  • 250g mascarpone cheese
  • 1/4 cup icing sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons heavy cream

Instructions

  1. Preheat oven to 350°F (175°C). Combine crumbs, melted butter, and sugar; press into a springform pan and bake for 10 minutes.
  2. Beat cream cheese and sugar until smooth, add pistachio paste, vanilla extract, sour cream, and eggs; mix until combined. Pour over the cooled base.
  3. Bake for 45-50 minutes until set but slightly jiggly in the center. Cool gradually in the oven for an hour before refrigerating for at least 4 hours or overnight.
  4. Make blackberry compote by cooking blackberries with sugar and lemon juice until softened; thicken with cornstarch mixture and let cool.
  5. Beat mascarpone with icing sugar and heavy cream until fluffy.
  6. Assemble towers by cutting cheesecake into desired shapes; top with blackberry compote and mascarpone.
