  • 3 cloves garlic (minced)
  • 1/2 large yellow onion (diced; about 3/4 cup)
  • 1 red bell pepper (diced)
  • 3 medium-sized red potatoes (cubed; about 4 cups)
  • 4 ears of corn (about 4 cups; see notes for substitution)
  • 3 cups vegetable broth
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 (14-ounce) can full-fat coconut milk
  • Chopped green onions (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Saut diced onion and bell pepper until soft (about 57 minutes).
  3. Stir in minced garlic and cook for 1 minute until fragrant.
  4. Add vegetable broth, corn kernels, cubed potatoes, paprika, garlic powder, salt, and pepper. Bring to a boil; then reduce heat and simmer for 15 minutes until potatoes are tender.
  5. Blend half of the chowder with coconut milk until smooth; return to pot and stir well.
  6. Serve garnished with chopped green onions.
