  • 4 large bell peppers
  • 1 lb lean ground turkey
  • 1 medium onion, chopped
  • 1 cup corn (Mexicorn or roasted)
  • 1 cup canned black beans, drained and rinsed
  • 2 cups salsa
  • 1 cup cooked brown rice
  • 1 cup shredded cheese (Mexican blend or cheddar)
  • Olive oil, salt, and pepper

Instructions

  1. Preheat the oven to 350°F (175°C). Spray a baking dish with olive oil. Halve each bell pepper lengthwise and remove seeds. Place in the dish cut side up, brush with olive oil, and season with salt and pepper. Bake for 15 minutes.
  2. In a skillet over medium-high heat, warm olive oil. Add ground turkey and cook until browned (about 3 minutes). Stir in taco seasoning, onions, garlic, corn, and black beans; cook until softened (about 5 minutes). Mix in salsa and brown rice; simmer for 2 minutes.
  3. Fill each pepper half with the turkey mixture. Top with cheese and return to the oven for another 15 minutes until melted.
  4. Serve warm with toppings like sour cream, avocado slices, cilantro, or lime juice.
