  • 1 lb lean ground beef
  • 8 corn or flour tortillas
  • 1 cup salsa (medium heat)
  • 2 cups shredded cheese (cheddar and Monterey Jack mix)
  • 1 can (15 oz) black beans, rinsed
  • 1 packet taco seasoning

Instructions

  1. Preheat your oven to 350F (175C). Grease a baking dish.
  2. In a skillet, brown the ground beef until fully cooked; drain excess fat.
  3. Stir in taco seasoning and half a cup of salsa with the beef until evenly coated.
  4. In the greased baking dish, layer a tortilla on the bottom. Spread half of the beef mixture over it, followed by half of the black beans and one cup of cheese.
  5. Repeat layering with another tortilla, remaining beef mixture, salsa, black beans, and cheese until all ingredients are used. Finish with cheese on top.
  6. Cover with foil and bake for about 25 minutes. Remove foil and bake an additional 10 minutes until cheese is bubbly and golden.
