  • 2 tablespoons avocado oil
  • 1/2 large yellow onion, chopped
  • 1 green bell pepper, chopped
  • 5 cups cubed sweet potatoes
  • 3 garlic cloves, minced
  • 1 pound turkey sausage
  • 10 eggs
  • 1/2 cup milk (plant-based can be used)
  • 1 teaspoon dried thyme
  • 1/2 cup grated mozzarella cheese

Instructions

  1. Preheat your oven to 375F (190C).
  2. In a skillet over medium heat, heat avocado oil and saut onion and bell pepper for about 5 minutes until softened. Add garlic and cook for another minute.
  3. Stir in turkey sausage, breaking it up as it cooks until browned (about 8-10 minutes). Drain excess fat.
  4. In a mixing bowl, whisk together eggs, milk, thyme, salt, and pepper. Add the cooked mixture and sweet potatoes.
  5. Pour into a greased baking dish, top with mozzarella cheese, and bake for 30-40 minutes until set.
