  • 1 cups yellow cornmeal
  • cup plain white flour
  • 1 cup mashed sweet potatoes (cooked)
  • cup melted butter
  • 1 cup buttermilk
  • 2 room temperature eggs
  • teaspoon ground cinnamon
  • 1 tablespoon of rising powder
  • 1 teaspoon salt
  • teaspoon baking soda
  • ?- teaspoon ground cloves
  • ?- teaspoon ground nutmeg
  • cup white sugar
  • cup packed light brown sugar

Instructions

  1. Preheat your oven to 400F (200C) and grease a 9×9 inch baking pan.
  2. In one bowl, whisk together the dry ingredients: cornmeal, flour, baking powder, salt, baking soda, cinnamon, and sugars.
  3. In another bowl, combine mashed sweet potatoes with eggs, melted butter, vanilla extract, and buttermilk.
  4. Pour the wet mixture into the dry ingredients and fold gently until just combined.
  5. Pour the batter into the prepared pan and bake for about 40 minutes or until golden brown.
