Easy stuffed bell peppers are a vibrant and delicious way to enjoy a healthy meal. Bursting with flavor, these colorful peppers are not only visually appealing but also nutritious, making them a perfect choice for family dinners or meal prep.

  • 4 medium bell peppers (red, yellow, or green)
  • 1 lb ground turkey or lean beef
  • 1 cup cooked rice (white or brown)
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Optional: Italian seasoning, herbs of choice

Instructions

  1. Preheat oven to 375F (190C) and spray a baking dish with nonstick cooking spray.
  2. Cut tops off bell peppers and remove seeds.
  3. In a skillet over medium heat, saut onions and garlic until fragrant. Add ground meat and cook until browned; drain excess fat.
  4. In a bowl, mix the meat mixture with cooked rice, diced tomatoes, salt, pepper, and optional seasonings.
  5. Stuff each pepper generously with the filling and place them upright in the baking dish.
  6. Cover with foil and bake for 30 minutes. Remove foil, sprinkle cheese on top, and bake uncovered for an additional 10 minutes until cheese is bubbly.
