  • Tomatillos
  • Fresh cilantro
  • Lime juice

Instructions

  1. Preheat the oven to 425F (220C). Remove husks from tomatillos and rinse them under cold water.
  2. Place tomatillos on a baking sheet lined with parchment paper and roast for 15-20 minutes until charred and softened.
  3. Transfer roasted tomatillos to a blender. Add chopped cilantro, jalapeos (seeded if desired), garlic cloves, and lime juice.
  4. Blend until smooth; taste and adjust salt or lime juice as needed.
  5. Chill in the refrigerator for at least one hour before serving.
