  • 8 medium waxy potatoes (about 1 kg), peeled and diced
  • 5 heads garlic, tops cut off
  • 2 shallots, peeled and halved
  • Olive oil for drizzling
  • Salt and pepper to taste

  • 1 cup heavy cream

Instructions

  1. Preheat oven to 400F (200C).

  6. Season to taste with salt and pepper; warm gently before serving.
