  • 1 whole head garlic
  • 1 tablespoon extra-virgin olive oil (divided)
  • 1 cups water (room temperature)
  • 1 teaspoon active dry yeast
  • 3 cups bread or all-purpose flour
  • teaspoon dried oregano
  • 1 teaspoon kosher salt
  • 2 teaspoons finely chopped fresh rosemary
  • Coarse sea salt & freshly ground black pepper

Instructions

  1. Preheat the oven to 400F (204C) and roast the halved garlic drizzled with olive oil for 40 minutes.
  2. In a small bowl, dissolve yeast in room-temperature water for 1015 minutes.
  3. In a large bowl, combine flour, salt, oregano, and rosemary. Mix in yeast water and smashed roasted garlic until sticky.
  4. Let the dough rise covered for 810 hours at room temperature until doubled.
  5. Shape the dough into a ball and place it seam-side up in a floured bowl; refrigerate for 124 hours.
  6. Preheat oven to 450F (232C) with a Dutch oven inside. Score the dough and bake covered for 30 minutes, then uncovered for an additional 1520 minutes.
