  • 680 grams water
  • 22 grams salt

Instructions

  1. In a large mixing bowl, whisk together the bread flour and instant yeast. In another bowl, dissolve the salt in the water before pouring it into the flour mixture. Stir until fully combined; the dough should be shaggy.
  2. Cover the bowl with plastic wrap or a kitchen towel and let it rest at room temperature for 12 to 14 hours until doubled in size.
  3. Lightly flour a surface, turn out the dough, and divide it into 18 equal portions (about 94 grams each). Shape each piece into a loose ball, let rest for 25 minutes, then reshape them into tight ovals.
  4. Place shaped rolls on a floured couche or parchment-lined baking sheet. Cover loosely and let rise for 1 hour.
  5. Preheat your oven to 450°F (232°C) with a baking stone inside and a metal tray on the lower rack for steam.
  6. Score the tops of the rolls with a sharp blade and transfer them to the hot baking surface. Pour hot water into the steam tray immediately and bake for 15 to 20 minutes until golden brown.
  7. Cool on a wire rack for at least 10 minutes before serving.
