  • 1 green bell pepper

  • 2 teaspoons dried oregano
  • 3 garlic cloves, minced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
  3. Marinate the chicken thighs in half of the marinade while you prepare the vegetables.
  4. Arrange sliced bell peppers, onion wedges, and cherry tomatoes on the baking sheet; drizzle with remaining marinade.
  5. Place marinated chicken on top of the vegetables.
  6. Bake for 35-40 minutes until chicken reaches an internal temperature of 165°F (75°C). Serve warm.
