  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350F (175C) and line a baking sheet with parchment paper.
  2. In one bowl, whisk together flour, baking soda, salt, and 1 teaspoon cinnamon.
  3. In another bowl, cream butter, brown sugar, and granulated sugar until light and fluffy.
  4. Mix in egg and vanilla until well combined.
  5. Gradually add dry ingredients to the wet mixture until just combined.
  6. Scoop dough into balls and roll them in a mixture of granulated sugar and remaining cinnamon.
  7. Place on the prepared sheet, spacing them apart. Bake for 8-10 minutes until set around edges and soft in the center.
