  • 1 tablespoon butter
  • 1 medium onion (chopped)
  • 2 medium carrots (peeled & sliced)
  • 2 sticks celery (chopped)
  • 2 cloves garlic (minced)
  • 4 cups chicken broth
  • 2 cups water
  • 1.5 pounds uncooked chicken breasts (boneless skinless)
  • 2 cups uncooked egg noodles
  • Salt & pepper (to taste)
  • Fresh parsley (for garnish)

Instructions

  1. In a large soup pot, heat olive oil and butter over medium-high heat. Add onion, carrots, and celery; sauté for 5-7 minutes until softened.
  2. Stir in garlic and cook for another 30 seconds until fragrant.
  3. Add chicken broth, water, chicken breasts, and Italian seasoning; bring to a boil.
  4. Reduce heat slightly, cover partially, and simmer for about 15 minutes.
  5. Stir in egg noodles; cook uncovered for an additional 8 minutes.
  6. Remove chicken, shred or cut into pieces, return to the pot and ensure it's fully cooked (165°F).
  7. Season with salt and pepper as desired; mix in fresh parsley before serving hot.
