  • 4 chicken thighs (skinless, bone-in or boneless)
  • 8 cups low-sodium chicken broth
  • 6 cups water
  • 2 Tbsp olive oil
  • 1 medium onion (finely chopped)
  • 2 celery stalks (finely chopped)
  • 2 carrots (sliced into rings)
  • 6 oz rotini pasta
  • 3 Tbsp fresh or frozen dill
  • Seasonings: salt and Mrs. Dash

Instructions

  1. In a large soup pot, combine water and chicken broth; bring to a boil. Add chicken thighs and boil for 20 minutes.
  2. While boiling, saut onion and celery in olive oil until softened; transfer to the pot.
  3. Add sliced carrots and rotini pasta to the broth; cook on low boil for about 15 minutes until pasta is tender.
  4. Remove chicken, shred it, then return it to the pot.
  5. Season with Mrs. Dash and sea salt; stir in dill before serving.
