  • 6 medium potatoes
  • 1 cup full-fat milk
  • 1 cup heavy cream
  • 30 g butter
  • 1 cup Cheddar cheese
  • 2 tbsp grated Parmesan cheese
  • 2 cloves garlic
  • 1 tbsp plain flour
  • 1 tbsp Dijon mustard
  • Pinch of nutmeg
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 200C (390F).
  2. Peel and wash the potatoes; slice them thinly.
  3. In a saucepan, melt butter over medium heat. Stir in flour to make a roux.
  4. Gradually whisk in milk until thickened; add cheeses, minced garlic, mustard, nutmeg, salt, and pepper.
  5. Layer potato slices in a greased baking dish, alternating with cheese sauce until all ingredients are used.
  6. Cover with foil and bake for 1 hour; uncover and increase temperature to 220C (410F) for an additional 15 minutes until golden brown.
