Ingredients

Scale
  • 1 lb boneless, skinless chicken thighs
  • 1 tbsp olive oil
  • 1 tbsp Cajun seasoning
  • tsp salt (adjust to taste)
  • tsp black pepper
  • 1 small yellow onion (diced)
  • 1 red bell pepper (diced)
  • 1 green bell pepper (diced)
  • 3 cloves garlic (minced)
  • 1 cup long grain white rice (uncooked)
  • 2 cups low-sodium chicken broth
  • 1 tsp Cajun seasoning
  • tsp smoked paprika for extra flavor
  • Chopped parsley or green onions (for garnish)
  • Lemon wedges (optional, for a bright finish)

Instructions

  1. In a bowl, season chicken thighs with olive oil, Cajun seasoning, salt, and black pepper. Mix until evenly coated.
  2. Heat olive oil in a large skillet over medium heat. Add diced onion and bell peppers; saut for about 5 minutes until softened. Stir in minced garlic and cook for an additional minute.
  3. Push vegetables to one side of the skillet; add seasoned chicken thighs to the other side. Cook for about 5-7 minutes until browned on both sides.
  4. Stir in uncooked rice and chicken broth; sprinkle with more Cajun seasoning and smoked paprika. Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes until rice is tender.
  5. Remove from heat once liquid is absorbed; fluff rice with a fork and garnish with parsley or green onions before serving.
