  • 1 cups uncooked sushi rice
  • 3 large nori sheets
  • 1 tbsp light soy sauce
  • 1 tbsp Kewpie mayo
  • 1 tbsp sriracha
  • Cooking spray
  • 1 tbsp rice vinegar
  • 2 tsp white sugar
  • 1 tsp sesame oil
  • furikake, for garnish
  • 1 green onion, for garnish

Instructions

  1. Cook sushi rice according to package instructions until fluffy.
  2. In a microwave-safe bowl, combine rice vinegar and sugar; microwave until dissolved. Mix into cooked rice and set aside.
  3. Preheat your oven to 400? (200?).
  4. In a mixing bowl, combine salmon with soy sauce, Kewpie mayo, sriracha, and sesame oil.
  5. Cut nori sheets into squares that fit muffin tins.
  6. Grease muffin tin; layer sushi rice followed by the salmon mixture in each cup.
  7. Bake for about 15 minutes until salmon is cooked through and tops are golden brown.
  8. Let cool slightly before garnishing with furikake and green onions. Serve warm.
