  • 350 g warm water (1⅓ cups + 1 tbsp)
  • 475 g bread flour (3¾ cups)
  • 50 g brown sugar (¼ cup)
  • 50 g cocoa powder (⅓ cup + 1 tbsp)
  • 125 g active sourdough starter (½ cup)
  • 11 g salt (2 tsp)
  • 170 g chocolate chips (1 cup)

Instructions

  1. In a mixing bowl, combine the warm water and active sourdough starter. Stir until mixed.
  2. In a separate bowl, whisk together the bread flour, brown sugar, cocoa powder, and salt.
  3. Gradually add the dry ingredients to the wet mixture using a stand mixer on low speed until a shaggy dough forms.
  4. Increase speed to medium and knead for about 8-10 minutes until smooth. If kneading by hand, do so on a floured surface until elastic.
  5. Gently fold in the chocolate chips until evenly distributed.
  6. Transfer the dough to a greased bowl, cover, and let rise in a warm place for 1-2 hours or until doubled in size.
  7. Shape into a loaf and place seam side down on a parchment-lined baking sheet. Let rise again for another hour.
  8. Preheat oven to 375°F (190°C) while waiting.
  9. Bake for about 45 minutes until golden brown and internal temperature reaches around 190°F (88°C).
  10. Cool on wire racks before slicing.
