  • 350 g warm water (1? cups + 1 tbsp)
  • 475 g bread flour (3 cups)
  • 50 g brown sugar ( cup)
  • 50 g cocoa powder (? cup + 1 tbsp)
  • 125 g active sourdough starter ( cup)
  • 11 g salt (2 tsp)
  • 170 g chocolate chips (1 cup)

Instructions

  1. In a mixing bowl, combine the warm water and active sourdough starter. Stir until mixed.
  2. In a separate bowl, whisk together the bread flour, brown sugar, cocoa powder, and salt.
  3. Gradually add the dry ingredients to the wet mixture using a stand mixer on low speed until a shaggy dough forms.
  4. Increase speed to medium and knead for about 8-10 minutes until smooth. If kneading by hand, do so on a floured surface until elastic.
  5. Gently fold in the chocolate chips until evenly distributed.
  6. Transfer the dough to a greased bowl, cover, and let rise in a warm place for 1-2 hours or until doubled in size.
  7. Shape into a loaf and place seam side down on a parchment-lined baking sheet. Let rise again for another hour.
  8. Preheat oven to 375F (190C) while waiting.
  9. Bake for about 45 minutes until golden brown and internal temperature reaches around 190F (88C).
  10. Cool on wire racks before slicing.
