  • cup granulated sugar
  • cup light brown sugar (packed)
  • 1 large egg (room temperature)
  • teaspoon vanilla extract
  • cup pumpkin puree
  • cup cocoa powder
  • cup mini semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350F and line a muffin pan with liners.
  2. In one bowl, whisk together the dry ingredients: flour, baking soda, salt, and pumpkin spice.
  3. In another bowl, mix the wet ingredients: oil, granulated sugar, brown sugar, egg, vanilla extract, and pumpkin puree until smooth.
