  • 8 ounces small pasta (elbows or ditalini)
  • 6 hard-boiled eggs (peeled and diced)
  • 3/4 cup mayonnaise
  • 1 tablespoon pickle juice
  • 1 tablespoon Dijon mustard
  • 1/2 cup red onion (diced)
  • 1/3 cup chopped pickles
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted boiling water until al dente. Drain and rinse under cold water.
  2. In a large mixing bowl, combine cooled pasta, mayonnaise, pickle juice, Dijon mustard, diced eggs, red onion, pickles, salt, and pepper. Mix gently until well combined.
