  • 1/2 cup old-fashioned oats
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup unsalted butter (melted)
  • 1 cup brown sugar (packed)
  • 1 teaspoon vanilla extract
  • 1 can sweetened condensed milk (14 oz)
  • 1/2 cup sour cream
  • 1 large egg yolk
  • 1/2 cup lemon juice (freshly squeezed)
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract (additional for filling)

Instructions

  1. Preheat your oven to 350F (175C). Line an 8×8-inch baking pan with parchment paper.
  2. In one bowl, whisk together flour, oats, salt, and baking soda. In another bowl, mix melted butter, brown sugar, and vanilla until smooth. Combine wet and dry ingredients.
  3. Press the mixture into the bottom of the prepared pan, reserving 3/4 cup for topping. Bake for about 10 minutes.
  4. For the filling, whisk together sweetened condensed milk, sour cream, egg yolk, lemon juice, lemon zest, and additional vanilla until smooth.
  5. Pour the filling over the baked crust and sprinkle reserved crumbs on top. Bake for an additional 17-20 minutes until golden brown.
  6. Allow to cool completely before slicing into squares.
