  • 34 boneless skinless chicken breasts
  • 1/4 cup freshly squeezed lime juice
  • 3 garlic cloves, minced
  • 1 teaspoon cumin powder
  • 1 teaspoon paprika (smoked for extra flavor)
  • 1/4 cup olive oil
  • 2 tablespoons low-sodium soy sauce

Instructions

  1. Gather all ingredients on your counter. Mince the garlic and measure the lime juice.
  2. In a bowl, whisk together lime juice, garlic, cumin, paprika, olive oil, and soy sauce until blended.
  3. Place chicken in a resealable bag or shallow dish and pour marinade over it.
  4. Seal the bag or cover the dish and let marinate in the refrigerator for at least 1 hour (overnight preferred).
  5. Preheat grill or oven to medium-high heat (400F/200C). Remove chicken from marinade and discard excess liquid.
  6. Cook until the internal temperature reaches at least 165F (75C). Serve garnished with extra lime juice.
