  • 1 cups all-purpose flour
  • cup granulated sugar
  • 2 large eggs
  • cup vegetable oil
  • 1 teaspoon baking powder
  • teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • teaspoon ground nutmeg
  • 8 ounces cream cheese (softened)

Instructions

  1. Preheat oven to 350F (175C). Grease or line a muffin tin.
  2. In a large bowl, mix flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk together pumpkin puree, eggs, vegetable oil, and vanilla until smooth.
  4. Combine wet ingredients with dry ingredients; stir until just mixed.
  5. For the cream cheese filling, beat softened cream cheese with sugar until smooth.
  6. Fill muffin cups halfway with batter, add cream cheese filling in the center, then top with remaining batter.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
