  • 2 cups cake flour
  • 1 teaspoon baking soda
  • 12 oz cold beer
  • 6 skinless halibut fillets (about 2 oz each)
  • Flaky sea salt
  • Cooking oil for frying

Instructions

  1. Prepare the tartar sauce by mixing chopped parsley, tarragon, minced shallot, minced pickles, hard-cooked egg, white wine vinegar, dijon mustard, and mayonnaise in a bowl. Chill in the refrigerator.
  2. In another bowl, whisk together cake flour, baking soda, and salt. Gradually add cold beer until smooth.
  3. Heat cooking oil in a deep fryer or large skillet to about 350F (175C).
  4. Pat halibut fillets dry and dip each into the batter until fully coated.
  5. Fry the battered halibut for about 4-5 minutes on each side until golden brown. Drain on paper towels.
  6. Sprinkle with flaky sea salt before serving with lemon wedges and chilled tartar sauce.
