  • 2 pounds shrimp (peeled and deveined)
  • 1 English cucumber (small diced)
  • 3 green onions (thinly sliced)
  • ⅓ cup mayonnaise
  • ⅓ cup sour cream
  • Juice and zest of 1 large lime
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon Dijon mustard
  • 1 garlic clove (minced)
  • Kosher salt to taste

Instructions

  1. In a bowl, mix mayonnaise, sour cream, lime juice and zest, dill, Dijon mustard, garlic, and salt until smooth. Set aside.
  2. Boil water in a large pot and cook shrimp for 2 to 3 minutes until pink and opaque. Transfer to an ice water bath to cool.
  3. Chop cooled shrimp into bite-sized pieces.
  4. In a mixing bowl, combine shrimp with cucumber and green onions; pour in the dressing and stir gently until coated.
